Ingredients

Here are the ingredients we need to make this recipe:

150 g of cricket flour
2 large eggs
2 tablespoons grated cheese, parmesan preferably
½ teaspoon of salt
1 can of sweet corn
2 shallots, finely sliced
1 finely chopped Jalapeno pepper
2 tablespoons olive oil
1 cup of fresh cream
1 teaspoon of lime juice

The preparation
To start, let’s mix the sweetcorn and remove the excess water by squeezing it in a colander. Then put it back in the blender and add the shallots and the Jalapeno pepper. If we do not have a blender, we can chop them finely and mix them in a bowl. After that, mix them with beaten eggs, cricket flour, grated cheese, salt, crème fraîche and lemon juice.

After that, let the resulting dough sit for half an hour in the refrigerator. After the exposure time, place a portion of dough in a frying bath with a tablespoon. To brown them, 4 to 5 minutes on each side can suffice. We can take it as an aperitif or even as a main dish.

 

Biscuit Sablé with cricket flour

You can also make real treats with edible cricket flour. To convince us, make a delicious biscuit.

To achieve it, we need:
100 g wheat flour
100 g of cricket flour
¼ teaspoon baking powder
1/8 teaspoon of sea salt
2 teaspoons of ground ginger
4 tablespoons coconut powder
½ teaspoon of allspice
125 g of butter
2 tablespoons molasses
10 cl of maple syrup

The preparation
The preparation is quite simple. Let’s start by taking a bowl and mixing the wheat flour, cricket flour, baking powder, salt, ground ginger, allspice and 2 tablespoons of coconut powder. The rest will be used to sprinkle the shortbread. Then add butter, molasses and maple syrup. Then, let the dough rest for 30 minutes in the refrigerator.

Meanwhile, preheat the oven to 180 ° C and coat the tray with butter. Do not forget to use parchment paper so that shortbreads do not stick to the baking tray. After 30 minutes, remove the dough from the refrigerator and form flattened balls. Roll each shortbread into the remaining coconut powder before putting it on the tray. Then put them in the oven for 15 minutes. Finally, let cool and serve.
